Ingredients

400 gms potatoes, peeled and thinly sliced

1 large onion, thinly sliced

2 garlic cloves crushed

1 green pepper, pith and seeds removed and chopped

1/4 cup butter or margarine

Salt and Pepper

Chopped Parsley

LYONNAISE POTATOES

Potatoes
(Serves 4)

method

Blanch the potato slices in boiling water for one minute, then drain.Fry the onion in the butter or margarine until soft. Layer the onion, potatoes and seasoning in a greased 2 pint (1 litre) 5 cup casserole, finishing with a layer of potatoes. Pour over any butter or margarine left in the pan, cover and bake in a moderatelt hot oven, 400 degree F, Gas Mark 6, for 11/2 hours. Remove the lid for the last 30 minutes so that the potatoes can brown. Sprinkle with parsley.
