1 quart vanilla ice cream

6 peach halves in syrup

500g strawberries

3 cups sugar

2 tbsp. slivered almonds, toasted

1 cup whipped cream

Peach
Melba

(Serves 6)

method
  1. 24 hours before, rub the strawberries through a fine sieve to extract all the juice.

  2. Add sugar to the juice and stir until it dissolves. Refrigerate. To serve Peach Melba, spoon some sauce in the bottom of a steamed glass, then two spoonfuls of ice cream and a peach half.

  3. Sprinkle with toasted slivered almonds, surround with whipped cream and sprinkle with a few drops of Melba sauce.

  4. Peach Melba can be prepared with strawberries, raspberries or red currants, using the same amount of fruit to sugar.
