| Ingredients
1 quart vanilla ice cream

peach halves in syrup
500g
strawberries

cups sugar

tbsp. slivered almonds, toasted

cup whipped cream

hours before, rub the strawberries through a fine
sieve to extract all the juice.
Add
sugar to the juice and stir until it dissolves.
Refrigerate. To serve Peach Melba, spoon some
sauce in the bottom of a steamed glass, then two
spoonfuls of ice cream and a peach half.
Sprinkle
with toasted slivered almonds, surround with
whipped cream and sprinkle with a few drops of
Melba sauce.
Peach
Melba can be prepared with strawberries,
raspberries or red currants, using the same
amount of fruit to sugar.
