Ingredients

2 eggs

250 gms dates

1/2 cup (80 gms) butter

85 gms (a little more than 3/4 cup) maida (plain flour)

3/4 cup (100 gms) powdered sugar

1/2 cup walnuts

1/2 tsp vanilla essence

1/4 tsp baking powder

1/2 tsp soda-bicarb

Custard Sauce

2 1/2 cups (1/2 kg) milk

3 tbsp sugar

1 heaped tbsp custard powder

Date

Walnut
Pudding

(Serves 6-8)

method
  1. Remove seeds from dates and chop them finely.
  2. Soak chopped dates in 5 tbsp of water with 1/2 tsp soda-bicarb for 4-5 hours or overnight.
  3. Sift maida with baking powder.
  4. Beat eggs and keep aside.
  5. Mix dates and walnuts gradually and alternately with the maida. Keep aside.
  6. Beat butter and sugar very well. Add essence. Mix.
  7. Add the maida mixture and the beaten eggs, gradually and alternately to the butter-sugar mixture. Beat well.
  8. Bake in a preheated oven at 2000 C for 45-50 minutes. Keep aside.
  9. Prepare custard sauce by dissolving custard powder in 1/2 cup milk.
  10. Heat the remaining 2 cups of milk and sugar. When it boils, add the custard powder, stirring continuously.
  11. Cook for a few minutes till it coats the back of the spoon.
  12. Serve the pudding with hot custard sauce.
