Ingredients

100 g flour

A pinch of salt

1 egg, beaten

Water as required

Oil for deep frying

12 g sugar substitute powder

1 (200 g) apple, peeled, cored and cubed

8 fresh strawberries, sliced

2 pineapple slices, cut into 2.5 cm cubes

8 orange slices, segmented

1 banana, sliced

1 tbs (15 g) cornstarch

10 g sesame seeds, toasted

CRISPY CRUSTS WITH FRUIT  (Sugar coated fresh fruits served on a bed of crisp fried biscuits)

Crispy Crusts with fruits
(Serves 10)

method

MIX the flour, salt and beaten egg. Add enough water and bind to stiff dough. Allow the dough to rest for 30 minutes. Knead again, roll into paper-thin sheets and cut into 2.5 cm broad strips. Deep fry the rolled strips in hot oil till crisp and arrange on a platter.
Melt the sugar substitute powder in a hot pan with a little water, add cut fresh fruits and lightly sauté them. Dissolve cornstarch in a little water to a smooth paste. Add to the pan and stir well.
Serve piping hot fruits on crusts, sprinkled with toasted sesame seeds.
