Batter

1 Cup flour pinch of salt

1 egg

1 1/4 cups milk oil for frying egg white

deep fat for frying

Filling

8 Oz. cream or cottage cheese

2 tablespoons butter or margarine

1 egg

salt and pepper

Piroshki for Breakfast or Brunch

Piroshki
(Serves 6-8)

method

Sift the flour and salt into a bowl. Add the egg and milk and mix to a smooth thin batter. Use two-thirds of the batter to make eight pancakes (crepes). Whisk the egg white and fold into the remaining batter.

Mix together the filling ingredients. Put the filling into the centres of the pancakes, roll them up and tuck in the ends to make secure parcels. Dip each parcel in the remaining batter and deep fry until golden brown.
